Premium Ingredients - We only use premium ingredients and spices in our spirits to ensure we get the best flavours, Where available we use locally sourced products including local Welsh spring water from Princes Gate, Narberth and blended with a dark caribbean rum from trinidad and tobago.
Natural fermentation - We ferment our ingredients for 7 days with added nutrients to ensure the yeast stays healthy throughout the process. We use temperature controlled vessels to monitor acidity and sugar content.
Double Distilled - We double distill our spirits to ensure purity and control the taste of our products, we have a 100l still with 4 copper plates that remove any unwanted flavours produced during fermentation, we also use a closed loop water cooling system to save water.
Spiced and filtered - During our second distillation we infuse our spirits with a range of selected spices to provide natural flavours and complexity to our drinks, this is then diluted from 95% abv down to 40% with pembrokeshire spring water ready for bottling.
